சுவை தேடி: கும்பகோணம் டிகிரி காபி !!!

குடகு மலையில் தோன்றித் தஞ்சைக்கு ஓடிவந்த காவிரி கூடவே காபி மீதான காதலையும் கொண்டுவந்து சேர்த்துவிட்டது என்றே நினைக்கத் தோன்றுகிறது. தஞ்சை நகரின் எந்தவொரு ஹோட்டலிலும் காபியின் சுவைக்குக் குறைந்தபட்ச உத்திரவாதம் உண்டு. வீட்டுக்கு வந்த விருந்தினரை வரவேற்று உபசரிக்கையில் காபியா, டீயா என்று கேட்பது வழக்கமில்லை. காபி ஸ்ட்ராங்கா வேணுமா லைட்டா வேணுமா என்பதுதான் பொதுவான கேள்வியாக இருக்கும். பால் இல்லாத வேளைகளில் வரக் காப்பியைத் (பால் கலக்காத காபி) துணையாகக் கொள்வதும் உண்டு.

காபி பொடியைப் பொறுத்தவரை கம்பெனி தயாரிப்புகளைவிடவும் தேவையான அளவுகளில் சிக்கரி கலந்து அரைத்துக்கொடுக்கும் உள்ளூர்க் கடைகளுக்கே முன்னுரிமை. சுருக்கமாகச் சொன்னால், தஞ்சைப் பகுதியே ஆனந்தக் கசப்புக்கு அடிமையான பிரதேசம். தமிழ்நாட்டின் மற்ற நகரங்களிலும்கூட காபிக்கென்று புகழ்பெற்ற உணவகங்கள் இருக்கின்றன. இருந்தாலும் தஞ்சாவூருக்கும் காபிக்கும்தான் அதிக நெருக்கம். மாவட்டம் முழுவதற்குமான காபி பெருமையைத் தற்போது கும்பகோணமே தட்டிப் பறித்துக்கொண்டு போய்விட்டது. கோயில் நகரம், அங்கு கூடுகின்ற சுற்றுலாப் பயணிகள் என்ற காரணங்களையெல்லாம் தாண்டி கும்பகோணத்திற்கு அந்தப் பெருமை கிடைத்தது பஞ்சாபிகேச அய்யர் நடத்திய லெட்சுமி விலாஸ் என்ற காபிக் கடையால்தான். காபிக்குத் தேவைப்படும் பாலுக்காக அவர் பதினைந்து பசு மாடுகளைப் பராமரித்து வந்தார். அதனால் அந்தக் கடைக்குப் பசும்பால் காபிக்கடை என்ற பெயரும்கூட உண்டு.

முதல் தலைமுறைத் தமிழ் எழுத்தாளர்கள் பலரும் தஞ்சையைச் சேர்ந்தவர்கள் என்பதால் காபி அருந்துவது தமிழகக் கலை இலக்கிய ரசனையின் ஒரு பகுதியாகவும் ஆகிவிட்டது. தி. ஜானகிராமன் தனது கதாபாத்திரங்களை நுரைத்து மணத்த “கும்மாணம்” காபியை உள்ளம் குளிரக் குடிக்க வைத்து மனநிறைவை அடைந்திருக்கிறார். தஞ்சை ப்ரகாஷ் தனது வடிகால் வாரியம் என்ற கதையில் காபி போடும் செய்முறையை வாசகர்களுக்கு விளக்கி உதவியிருக்கிறார். கறந்த பசும்பாலில் தண்ணீர் கலக்காமல் ஆடை படராமல் தயாரிக்கிற காபிக்குத்தான் டிகிரி காபி என்ற முதல் மரியாதை. பாலுக்கு இணையான முக்கியத்துவம் காபி டிக்காஷனைத் தயாரிப்பதற்கும் உண்டு.

நூறு கிராம் அளவுள்ள காபிக் கொட்டைகளைப் பதமான சூட்டில் வறுத்து அரைத்தெடுக்கையில் அது எண்பது கிராம் வர வேண்டும். அந்தக் காபிப்பொடியிலிருந்து டிக்காஷன் வடித்தெடுக்க இரண்டு மணி நேரம் காத்திருக்க வேண்டும். காபிப் பொடியிலிருந்து இரண்டாவது தடவை டிக்காஷன் வடிக்கக் கூடாது. டிக்காஷனைப் பாய்லரில் வைத்து சூடு காக்க வேண்டும். காபி கலக்கும்போது முதலில் சர்க்கரையை இட்டு அதன்மீது டிக்காஷனை ஊற்றி அதற்கும் மேலாகத் தேவையான அளவில் பாலைச் சேர்த்துக் கொள்ள வேண்டும். எங்கேயும் எப்போதும் பாக்கெட் பால் என்றாகிவிட்ட பிறகு டிகிரி காபி என்று பெயர் சொல்வதில் இப்போது எந்தப் பொருத்தமும் இல்லை.

கடையில் பாய்லரும் பித்தளை டவராக்களும் இருந்தால் மட்டும் டிகிரி காபி ஆகிவிடாது. ஆனாலும் தேசிய நெடுஞ்சாலையின் வழியெல்லாம் கும்பகோணம் டிகிரி காபி என்ற பெயர்ப் பலகைகளைப் பார்க்காமல் பயணிக்க முடியாது என்ற நிலை ஏற்பட்டுவிட்டது.

That love alone is sacred and divine which is based on complete obliviousness to one’s self and is solely concerned with the yearning for God. Only when such a precious diamond of love is shining in your heart, you will have sacred and divine thoughts. In ancient days, sages lived in the forests amidst wild animals and performed penance. How were they able to live in peace amongst these animals? Because they were filled with divine love, they extended that love to the wild beasts also. They had no lethal weapons with them, only the weapon of love, which transformed even the nature of the wild animals. Therefore fill your hearts with love.

தொலைக்காட்சிகள் ஒளிபரப்பி வருகின்றன.
சின்னத்திரையில் காட்டுகிறபடி செய்து பார்த்தால்,
கடைசியாக உருவாகும் பண்டத்தை வாயில் வைக்க
முடியுமா.? என்பதே சந்தேகம்.

இல்லாவிட்டால், முருங்கைக்காய் சாம்பார்,
வெண்டைக்காய் பொறியல் என்று, காலம் காலமாக
வருகிற குழம்பு – பொறியல்களையே ஆங்கில வார்த்தைகள்
மிலி அளவுகள் சொல்லி நிகழ்ச்சியை ஒப்பேற்றிவிடுவார்கள்.

பெரியவா, பூர்வாசிரமத்தில் சமையற்கட்டுப் பக்கம்
போனதில்லை; சந்நியாசம் ஏற்றபிறகு அதற்கு அவசியமும்
இல்லாமல் போய்விட்டது. ஆனால் பெரியவாளுடைய
சமையல் பக்குவம் செய்யும் புதுமை முறைகள்
எப்படியோ அத்துபடியாகியிருந்தது.!.

பண்டரிபுரத்திலிருந்து திரும்பிக் கொண்டிருந்தோம்.

பெரியவாளுக்குப் பிட்சை தயார் செய்தபின்,
மிகுதியாக இருந்த சில பொருள்களைக் கொண்டு
ஒருவழியாக எங்கள் மதிய உணவை முடித்துக்கொண்டோம்.
சற்று ஓய்வெடுக்கும் வேளை.

அமர்க்களமாக வந்து இறங்கினார்கள்,இருபது பேர்கள்.

எல்லோரும் சென்னைப் பகுதியிலிருந்து வந்தவர்கள்.
ஸ்ரீமடம் முகாமில், ஸ்ரீசந்த்ரமௌளீஸ்வர பிரசாதமாக
அருமையான உணவு கிடைக்கும் என்ற நம்பிக்கையுடன்
வந்தவர்கள்.

ஆனால் ஸ்ரீமடம் ஒரு பெரிய மரத்தின் அடியில்
அல்லவா முகாமிட்டிருக்கிறது.

சமைப்பதற்குத் தேவையான பாத்திரங்கள்,
சாமான்கள் கிடையாதே.?.

பரமாசாரியாளுக்கு அதைப் பற்றியெல்லாம் கவலையில்லை!
பசியுடன் வந்திருக்கும் அன்பர்களுக்குச் சாப்பாடு
போட வேண்டும் என்பது மட்டுமே குறிக்கோள்.

பிரும்மசாரி ராமகிருஷ்ணன் என்று ஓர் அணுக்கத் தொண்டர்
அவரிடம், “எல்லோருக்கும் சமையல் செய்”
என்று உத்திரவும் இட்டார்கள்.

ராமகிருஷ்ணன் கைகளைப் பிசைந்துகொண்டு பரிதாபமாக
நின்றான்.”அடுத்த ஊர் போனதும் சமைத்துப் போடுகிறேனே.?
என்றான்.

ஏதோ பிரச்சினை இருக்கிறது என்பது பெரியவாளுக்குப்
புரிந்துவிட்டது.

“அரிசி இருக்கோன்னோ.?”

“இருக்கு.கொஞ்சம் பயத்தம்பருப்பும் இருக்கு.”

(மோர்)..”நல்லதாப் போச்சு.! நீ என்ன பண்றே.? அரிசியைக்
…………..களைஞ்சு, அந்த ஜலத்தைத் தனியா ஒரு பாத்திரத்திலே
………….வெச்சுக்கோ.அந்த ஜலத்தில் கொஞ்சம் உப்புப் போட்டு
………….எலுமிச்சம் பழம் பிழிஞ்சு, நாரத்தை இலையைக்
………….கிள்ளிப் போடு. இதுதான் மோர்.

…………- அந்தக் கொதிநீரிலே எலுமிச்சம்பழ ரசம் (சாறு)
………….சேர்த்துட்டேன்னா, அதுதான் ரசம்.

…………..ரெண்டு பச்சைமிளகா கிள்ளிப் போடு.
…………..இதுதான் கறி.!”

எல்லாம் அரைமணியில் ரெடி.அதற்குள், எல்லோருக்கும்
இலை, தண்ணீர் சேகரித்து வைத்தோம்.

சாதம்,பயத்தம்பருப்புக் கறி, ரசம், மோர் -என்று
அறுசுவை டின்னர்.!.”

“சாப்பாடு ஏ ஒன்.!” என்றார் ஒருவர்.

“தேவாமிர்தம்.!” என்றார் இன்னொருவர்.

“இவ்வளவு ருசியான சாப்பாட்டைச் சாப்பிட்டதே இல்லை.!”
என்றார். மற்றொருவர்.

தொண்டர்களாகிய நாங்கள் எங்களுக்குள் சிரித்துக்

கொண்டோம். எல்லாம் பெரியவாள் வாக்கின் ருசி
என்பது எங்களுக்குத் தெரிந்ததுதான்.

விருந்தோம்பல் பற்றி, பெரியவாளிடம் பாடம் கற்க வேண்டும்.

அது அட்சய பாத்திரம்.!.

Do not indulge in arguments and disputations; one who clamours aloud has not grasped the Truth, believe Me! Silence is the only language of the realised. Practice moderation in speech; that will help you in many ways. It will develop Prema, for most misunderstandings and factions arise out of carelessly spoken words. When the foot slips, the wound can be healed; but when the tongue slips, the wound it causes in the heart of another will fester for life. The tongue is liable to four big errors: uttering falsehood, scandalising, finding fault with others and excessive talk. These must be avoided if there must be peace for the individual and society. The bond of brotherhood will be tightened if people speak less and speak sweet. That is why silence (mounam) was prescribed as a vow for spiritual aspirants by scriptures. As spiritual aspirants in various stages of the road, this discipline will be very valuable for you.

Once a friend asked the famous sculptor from Italy, Michelangelo, “Why are you working so hard, chiselling this large piece of rock? Why don’t you go home and take some rest?” Michelangelo replied: “I am trying to release the Divine that is in the rock. I wish to bring out of this lifeless stone the living Divinity that is embedded in it.” If a sculptor could create from an inanimate stone a living Image of God, cannot human beings vibrant with life manifest the living Divinity that resides within them? What is the reason for this incapacity to realise the Divinity within? It is because we do not realise the soiled cover in which it is wrapped up. If our clothes get dirty, we change them because we are ashamed to appear in unclean garments. If our house is shabby, we try to clean it. But when our minds and hearts are polluted, we do not feel ashamed! To purify our hearts and minds, the first thing we have to do is to lead a righteous life. Our actions must be based on morality.

One of the biggest problems still haunting the poor regions of the world is the lack of clean drinking water. This is such a nccessaity that we take for granted, but many populations do not. Now, a new solution has arisen, one that is both simple and very promising.

In the Namib desert where rain is rare but fog common, a beetle survives by condensing water on its back until drops roll down into the insect’s mouth. Now this principle has been magnified onto a grand scale, providing a possible solution to the desperate lack of water that plagues the populations of many of the world’s dry regions.

There is no lack of solutions being experimented with for water shortages. Wells, recycling techniques and methods for cleaning poisoned water have all attracted considerable efforts, particularly since the Bill and Melinda Gates foundation have made the issue a priority for their considerable resources.

However, many of these techniques have floundered; great on the page but unsuited to real world conditions. Those technologies that are cost effective represent only partial solutions, working well where a permanent water supply is available, but unsuited to regions where surface water vanishes in the dry season and groundwater is hard to reach. As deforestation and Global Warming expand the areas where water is scarce or erratic something else is needed.

While Warka Water to be treated with caution after so many false dawns, it has the advantage of being designed to match the conditions where most alternatives perform the worst.

The towers have a 9m tall bamboo or juncus frame holding up a plastic mesh net. As the temperature falls during the night water condenses onto the net and rolls down to a reservoir at the bottom of the tower. Where the beetle draws just a few life-giving drops from the Namib fog, the much larger surface area of the nets allows a 100l a night to collect under ideal conditions. Mesh is used, rather than a solid surface, so that air can circulate, bringing in ever more water.

As the designers Arturo Vittori and Andrea Vogler put it, “The lightweight structure is designed with parametric computing, but can be built with local skills and materials by the village inhabitants.”

The beetle has proven an inspiration to many but Warka Water claim their carefully shaped design produces much more water for less cost than previous versions.

The Warka Water tower is named after a fig tree native to Ethiopia, and depends for its success on a large temperature difference over a night. Since desert regions are notorious for huge temperature variations, particularly during the dry season, Warka towers should flourish where they are needed most.

“It’s not just illnesses that we’re trying to address,” Vittori told the Smithsonian Magazine, although with 1400 children a day dying from waterborne diseases that would be reason enough. “Many Ethiopian children from rural villages spend several hours every day to fetch water, time they could invest for more productive activities and education,” Vittori says. “If we can give people something that lets them be more independent, they can free themselves from this cycle.”

Vittori hopes to install two Warka Towers in Ethiopia next year, and believes that, “Once locals have the necessary know-how, they will be able to teach other villages and communities to build the Warka.” Cost estimates for the remote constructions of systems are notoriously unreliable, but Vittori believes the towers can be built for $500 each, a quarter or systems that purify equivalent amounts of water. They are seeking sponsorship to bring the idea to fruition. While we suggest Warka Beer would be a great fit, anyone wanting to get behind the idea should make contact.

But while the beetle extracts only a the few drops of water it needs to survive, the much larger area surface of the nets creates about 100 litres of water every night. Since the towers use a net and not a solid surface, the air circulates through, allowing the net to capture more and more moisture.

The architect of this brilliant idea, Artuo Vittori, says that the towers can be built for only $500 a tower, and he hopes that once more are introduced to the African continent, the local population will learn to build these towers for itself, thus populating the dry regions with these towers, an elegant solution for a terrible problem!

” இந்த பிரசாதம் சுந்துவுக்கு …”

தன்னிடம் அளவு கடந்த பக்தி கொண்டவர்களுக்கு மஹான் தேவையான போது ஆசிகளையும் பிரசாதங்களையும் வழங்குவது வழக்கம்.

நான் சொல்லும் இந்த நிகழ்ச்சி திருச்சி சுந்தரேசனைப் பற்றியது. அவருக்கு மஹானிடம் இருந்த ஈடுபாடு கொஞ்ச நஞ்சமல்ல. எல்லாமே தமக்கு மஹான் தான் என்று மனதார நம்பிய பக்தர்களில் அவரும் ஒருவர். சுந்தரேசன் தனது ரயில்வே பணியில் இருந்து ஓய்வு பெற்ற பின்னர் சென்னை நங்கநல்லூரில் தன் மகன் வீட்டில் தங்கியிருந்தார். அப்போது அவருக்கு உடல்நிலை முற்றிலும் கெட்டுவிட படுத்த படுக்கையாக இருந்தார். இந்த நிலையில் காஞ்சி மஹானைப் பார்க்கப் போகவில்லையே என்கிற கவலை அவரை ஒரு பக்கம் வாட்டி எடுத்தது.

அந்த சமயம் மஹான் பிறந்த அனுஷ நட்சத்திரத்திற்கு மறுநாள் பெரியவா கிரஹ ராஜகோபாலும், பிரதோஷம் மாமாவின் நெருங்கிய சீடரான ஆடிட்டர் ரவியின் தந்தையும் அனுஷ பூஜை பிரசாதங்களை எடுத்துக் கொண்டு மஹானைப் பார்க்கப் போயிருந்தார்கள். மஹானிடம் பிரசாதத்தை சமர்ப்பித்த பிறகு, அங்கே வரும் பக்தர்களுக்கு வழி விட்டு ராஜகோபால் ஒரு பக்கமாகப் போய் அமர்ந்து தியானத்தில் ஆழ்ந்துவிட்டார்.

அந்த சமயத்தில் மஹான் அவரை அழைத்து, “இந்த பிரசாதத்தை கொண்டு போய் சுந்துவிடம் கொடு” என்று சொல்வது போன்ற நினைவு அவர் மனதில் ஓடியது.

திடீரென்று விழித்துப் பார்த்த அவர், தன் அருகில் யாரும் இல்லாததைக் கண்டு வியந்தார். தனக்கு மஹான் இட்ட உத்தரவு பிரமையா, மஹான் இட்ட கட்டளையா என்று தடுமாறிக் கொண்டு இருந்தபோது மஹான் அழைப்பதாக மடத்து ஊழியர் ராஜகோபாலை அழைத்தார்.

மஹானின் முன் பவ்யமாக அவர் நின்றபோது, மஹான் அவரிடம் பிரசாதத்தைக் கொடுத்து, “இதைக் கொண்டு போய் அவனண்டே உடனே கொடு” என்று மட்டும் சொன்னார். பொறிதட்டியது போல் ராஜகோபாலுக்கு உடனே அந்த சுந்து யார் என்று புரிந்து விட்டது. வேறு யார்? அவருடைய பெரியப்பாவும் மஹானின் தீவிர பக்தருமான சுந்தரேசன் தான்.

அவன் யார்? என்று சொல்லாமல், பிரசாதத்தைக் கொண்டு போய் கொடு என்றால் தியானத்தில் இருந்தபோது மஹான் சொன்னதும் உண்மையான கட்டளை தான்.
தன் மனதில் தோன்றியதற்கும் இப்போது மஹான் கட்டளை இடுவதற்கும் சம்பந்தம் இருப்பதாகத் தெரிந்தது.

ராஜகோபாலும் “யாரண்டை” என்கிற கேள்வியை எழுப்பிக் கொண்டு நிற்கவில்லை.

பிரசாதத்தை எடுத்துக் கொண்டு போய், நங்கநல்லூரில் இருந்த தன் பெரியப்பாவிடம் சமர்ப்பித்தார் ராஜகோபால்.

“நான் பார்க்கவரலேயேன்னு நீயே எனக்குப் பிரசாதத்தை அனுப்பினியா மஹானே?” என்று கண்களில் நீர் வழிய கேட்டபின் அந்த முடியாத நிலையிலும் பிரசாதத்தை பயபக்தியோடு உட்கொண்டார். உடல்நிலை மோசமாகத்தான் இருந்தது.

இருந்தாலும் மஹானின் பிரசாதத்தை உட்கொண்ட பின்னர், மேலும் சில தினங்கள் அவர் உயிரோடு இருந்து பிறகு இறைவனடி சேர்ந்தார். மஹான், தன் பக்தர்களை எப்படி எல்லாம் ஆட்கொண்டார் என்பதற்கு இது இன்னொரு உதாரணம்.

A man who had four wives happened to go to Mumbai on some work. From there, he wrote to all of them that he was prepared to bring home whatever each of them wanted. The first wife asked for some nice tonics for her health, as well as rugs and woollen clothing to be of service whenever she fell ill. The second wife wanted some sarees of the latest style, jewellery of the Mumbai type and such other sundry decorative stuff. The third asked him to select for her some religious books like the Jnaneshwari, abhangs, etc. available in Mumbai book-shops, as well as pictures of Pandharinath, Bhavani and Sai Baba. The fourth wife had no list at all; she simply wrote, “If you return soon and safe, that is enough for me.” The others got big packets containing whatever they had asked for, but the last one got his love. God gives you whatever you pray for; so think well and discriminate clearly before you pray and ask.
