Seventy-five-year-old Mylapore homemaker, Chitra Viswananthan tells Srinivasa Ramanujam how cooking meets technology through her mobile app

These days, when 75-year-old Chithra Viswanathan goes to Marina Beach for a walk, people stop her. They pause and look at her like they’ve seen her somewhere. And then, they recognise her as the ‘Internet maami’, a sobriquet she’s quite at ease with now.

A few of these co-walkers — regulars at the beach — are friends now. But that’s just a handful. When she logs on to Facebook, she has more than 1,200 friends. “I do not usually accept anyone as a friend unless we have many mutual friends,” she says, adjusting her glasses and skilfully sifting through the numerous windows on her iPad.

She’s 75 and lives alone in Mylapore but this overtly confident use of technology, which you’d normally associate with youngsters, has helped her showcase her passion, cooking, on a global platform.

If Meenakshi Ammal brought out the revolutionary Samaithu Par, a cookbook in Tamil, more than half a century ago, Chithra uses technology to help people all over the world. Her mobile phone application, called AskChitVish Premium, which was launched a few years ago, already has 2,300 recipes and 200 more waiting to be uploaded.

She always had a passion for dishing out new stuff from the kitchen for her grandchildren. But it was about a decade ago when, the Internet boom had just started and she was getting familiar with the computer, that she noticed a query on a website for the recipe of ‘poosanika kootu’. “It was unanswered for three days,” she recalls, “I just took it upon myself to answer it and give her the right recipe.”

There was no looking back after that — she started writing a cookery column for Indusladies.com that had a huge traction among Indians settled abroad. She cooked, she blogged, she wrote and she shared her experience online.

‘Chitvish’ soon became a hit. So much so that she had ‘fans’ across the world. One of them — a 45-year-old woman from Atlanta — actually came down to Chennai just to meet her. “She had been following my recipes,” says Chithra, “When she came to India, she made it a point to come to Chennai especially to see me. I was a little hesitant and clearly told her that I was no fancy chef but just a housewife. It was special to have someone come all the way just for me.”

Her everyday routine begins quite early, just like any other homemaker, but there’s a key difference. When she enters the kitchen, she’s armed with an iPad and her Samsung Galaxy — to take notes and pictures of what she does. “If I see something different on TV, I immediately try it out,” she says, “I never post any recipe online without trying it.”

Baking is very close to her heart as well. “I’m very passionate and experiment more with breads than cakes,” she says. It’s not a new-found passion but one that she started indulging in quite a while ago. “It was in 1967,” she says, “I saw an ad for a baking course in the Polytechnic Institute, Taramani, and immediately went for it with a few friends. It was perhaps the first course for baking in the city. The instructors taught us well and we were fascinated by the concept.”

Another concept that’s caught her attention of late is fusion cooking. She’s tried out Au gratin dosa and Punjabi pesto pizza, besides others. “It helps people try out new things,” she says, “The most exciting part is to add your own touch to a tried and tested recipe. For instance, in dishes that need eggs and ingredients that aren’t available here, I look for an alternative.”

Chithra doesn’t eat out, but doesn’t mind heading out once a while to check out what’s new and in. “Why do we like eating out?” she asks, “Not just for the taste but also the way the food is presented. I believe that we eat with our eyes — it’s important to dress up what you’ve made.”

When a friend or neighbour makes a sarcastic comment about cooking, it upsets her. “It (cooking) is very creative,” says Chitra, who credits her late husband, Viswanathan for encouraging her a lot, “That’s not all… there’s a science behind it. Cooking is about how much you add and in what quantities. A little more or a little less makes all the difference.”

A few years down the line, she hopes to come up with more innovative recipes. But not all of them are saved on her computer and iPad. “They keep crashing…can’t trust them too much,” she says nonchalantly, “I prefer storing them all on Cloud.” For this 75-year-old, the sky’s the limit.

Mike Taylor in Maine contributed this interesting photo. He calls it Nature & Man. It’s one frame from a time lapse of the Milky Way, photographed in western Maine. The shot includes quite a bit of light pollution and some fast-moving cloud cover. Most of the light pollution in this image is coming from Farmington, Maine which is about 35 miles from this location. Perhaps most interesting to most skywatchers is the bright iridium flare captured here. As Mike said, they are often mistaken for meteors, but, instead:

An iridium flare is a specific type of satellite flare that is made when the antennas of an Iridium communication satellite reflect sunlight directly onto the surface of the Earth. The satellites are in a near-polar orbit at an altitude of 485 miles. Their orbital period is approximately 100 minutes with a velocity of 16,800 miles per hour.

The uniqueness of Iridium flares is that the spacecraft emits ‘flashes’ of very bright reflected light that sweep in narrow focused paths across the surface of the Earth. An Iridium communication satellite’s Main Mission Antenna is a silver-coated Teflon antenna array that mimics near-perfect mirrors and are angled at 40-degrees away from the axis of the body of the satellites. This can provide a specular reflection of the sun’s disk, periodically causing a dazzling glint of reflected sunlight.

At the Earth’s surface, the specular reflection is probably less than 50 miles wide, so each flare can only be viewed from a fairly small area. The flare duration can last from anywhere between 5 to 20 seconds and can easily be seen by the naked eye

பழமொழிகளில் நாட்டுப்புற மருத்துவம்

மக்களால் பயன்படுத்தப்படும் பழமொழிகளால் மக்களின் பண்பாட்டையும், பழக்க வழக்கங்களையும், சமுதாயப் பின்னணியையும் அறிந்து கொள்ள முடிகின்றது. இத்தகைய பழமொழிகளில் மருத்துவச் செய்திகளும், நோய் ஏற்படாமல் இருக்கக் கடைப்பிடிக்க வேண்டிய வழிமுறைகளும், மற்றும் மருந்துப் பொருட்களும் கூறப்படுவதுடன், ஆதனால் தீரும் நோய் பற்றியும் அறிவுறுத்தப்பட்டுள்ளன.

“இளைத்தவனுக்கு எள்ளைக்கொடு;
கொளுத்தவனுக்குக் கொள்ளைக் கொடு”

மனிதர்களுக்கு ஏற்படக் கூடிய 4448 நோய்களுக்கும் அடிப்படை வாதம், பித்தம், கபம் என்ற மூன்றுமே ஆகும். இவற்றுள் வாதம், பித்தம் தொடர்பாக ஏற்படும் நோய்களைப் போக்கும் வழிமுறைகளை இப்பழமொழி விளக்குகின்றது. ஆற்று நீரிலும், அருவி நீரிலும் உயர்ந்த தாதுப் பொருட்களும், மூலிகைச் சத்துக்களும், நிறைந்து காணப்படும். ஏனெனில், ஆற்றுப் படுகையிலும், அருவிக்கு நீர் வரும் மலைப் பகுதியிலும் மூலிகைச் செடிகள் நிறைந்து காணப்படும். இந்நீர் மூலிகைகளின் மீது பட்டு வருவதால் இத்தகைய குணமுடையதாக உள்ளது. வாதநோய் தொடர்பாக நரம்புக்கோளாறுகளும், பித்தநோய் தொடர்பாக மூளைக் கோளாறும் ஏற்படுகின்றன. இவற்றைக் குணப்படுத்த ஆற்று நீரும், அருவி நீரும், பயன்படுகின்றன. வாதம், பித்தம் இரண்டையும் சோற்று நீர் குணமாக்குகின்றது. இத்தகைய மருத்துவகுணம் கருதியே நாட்டுப்புற மக்கள் காலையில் எழுந்ததும் சோற்று நீரை அருந்துகின்றனர்.

“வேலம் பட்டை பித்தத்தைப் போக்கும்; ஆலம்பட்டை மேகத்தைப் போக்கும்”

வேலம்பட்டையை இடித்து ஒரு குவளை நீர்விட்டுக் காய்ச்சி வடிகட்டி அரைக் குவளையாக்கித் தினமும் காலை, வேளை மட்டும் குடித்துவர பித்த நோய்களான, வயிற்றுப்புண், பித்தமயக்கம், கைகால் குடைச்சல் குணமாகும். ஆலமரத்தின் பட்டையைக் குடிநீராக்கி குடித்து வர வாய்ப்புண், வாய்நாற்றம், சிரங்கு, கரப்பான்படை, ஆகியன விலகும் என்கிறது பழமொழி.

“மாதா ஊட்டாத அன்னத்தை மாங்காய் ஊட்டும்”

மாங்காய் என்பது மாங்காய் ஊறுகாயைக் குறிக்கும், மாங்காய் ஊறுகாய் பசியைத் தூண்டுகிறது. எனவே உணவில் மாங்காய் ஊறுகாயைச் சேர்த்துக் கொள்வதால் ஜீரண சக்தி அதிகரிக்கும் என்பதை இப்பழமொழி விளக்குகிறது.

“ஒரு போது உண்பான் யோகி; இருபோது உண்பான் போகி; முப்போது உண்பான் ரோகி”

ஒரு வேளை உணவை உட்கொண்டு ஆழ்ந்த யோகப் பயிற்சி மேற்கொள்வதால், மூளையின் அடிப்பகுதியில் ஹைப்போதாலமஸ் என்னும் அமைப்பிற்குக் கீழே உள்ள சுரப்பியிலிருந்து அமிர்தம் என்று சித்தர்களால் கூறப்படும் முறையும், மேலும் நரை திரை நோய்கள் அணுகாது. இருவேளை உணவை உட்கொள்வதால் வாழ்வு நோயற்று இன்பமுடையதாக இருக்கும். மூன்றுவேளை உணவு கொள்பவர்கள் நோயாளிகளாகவே இருப்பர். அஜீரணம், மலச்சிக்கல், குடல்நோய் போன்றவற்றால் இவர்கள் பாதிக்கப்பட்டு, எந்நேரமும் நோயுடன் போராடி வாழும் நிலையை உண்டாகும்.

அழுத பிள்ளை சிரித்ததாம் கழுதைப் பாலைக் குடித்ததாம்

சில குழந்தைகள் பிறக்கும்போதே நோய்களின் அறிகுறியுடன் பிறக்கும். உள்ளங்கை, உள்ளங்கால் பகுதிகள் நீல நிறமாக இருப்பின் குழந்தை செவ்வாப்பு என்னும் நோயால் தாக்கப்பட்டுள்ளதாக மருத்துவர்கள் கருதுகின்றனர். இதற்குரிய மருந்தாகக் கழுதைப் பால் புகட்டப்படுகிறது. என்பதனை இப்பழமொழி குறிக்கிறது. கழுதைப்பால், செவ்வாப்பு நோயைக் குணப்படுத்த வல்லது, கழுதைப்பாலில் இருந்து தோற்றம் பெற்றது இப்பழமொழி.

ஆயிரம் வேரைக் கொன்றவன் அரை வைத்தியன்”

இதனைக் கிராமப்புற மக்கள் ஆயிரம் பேரைக் கொன்றவன் அரை வைத்தியன் என்று வழங்குகின்றனர். ஆயிரம் வேரைக் கொன்றவன் அரை வைத்தியன் என்பதுவே இதன் பொருளாகும். நாட்டுப்புற மருந்துகளில் மூலிகைச் செடிகளும் அவற்றின் வேர்கள் மற்றும் பட்டைகளும் பயன்படுகின்றன. இவற்றுள் குறைந்தது ஆயிரம் வேர்களின் பயன்பாடு பற்றி ஒருவன் தெரிந்திருந்தால் தான் அரை வைத்தியன் என்ற நிலையைப் பெற இயலும் என்பதை இப்பழமொழி உணர்த்துகிறது.

“அரசனை நம்பிப் புருஷனை கைவிட்டாளம்”

அரச மரத்தைச் சுற்றிவந்தால் குழந்தைப் பாக்கியம் ஏற்படும் என்று யாரோ, கூறக்கேட்ட ஒருத்தி கணவனுடன் சேராமல், அரசமரத்தை மட்டுமே சுற்றி வந்தாளாம். அரசமரம், வேம்பும் இணைந்த மரத்தினைச் சுற்றிவர காற்றானது கருப்பையில் உள்ள நச்சுக் கிருமிகளை அழிக்கும் தன்மை வாய்ந்தது என்பதை அறிந்தே நம் முன்னோர்கள் பிள்ளையார் சிலையை இந்த மரத்தின் கீழ் வைத்தனர். குழந்தைப் பாக்கியமற்ற பெண்கள் கும்பிடுவதற்கு இதுவே முக்கிய காரணம் ஆகும்.

ஆலும் என்பது ஆலமரத்தின் விழுதினையும், வேலமரம் என்பது கருவேல மரத்தின் குச்சிகளையும், நால் என்பது நாலடியாரையும் இரண்டு என்பது திருக்குறளையும் குறிக்கும். இது பொதுமக்கள் அனைவராலும் சாதாரணமாகப் பயன்படுத்தப்படும் பழமொழியாகும். ஆலமரத்தின் விழுதினையும், கருவேல மரத்தின் மரக்குச்சிகளையும் நன்கு மென்று பல்விளக்க, பல் நன்கு பளபளப்புடனும், பல் ஈறுகள் நல்ல பலத்துடனும் காணப்படும் என்னும் செய்தி இப்பழமொழியில் விளக்கம் பெறுகிறது.

“பத்து மிளகு இருந்தால் பகைவன் வீட்டிலும் உண்ணலாம்”

மருத்துவக் குணம் கொண்ட மிளகு நம் உணவில் பயன்படுத்தப்படும் பொருள்களுள் ஒன்றாகும். இந்த மிளகு நஞ்சு நீக்கும் தன்மையுடையது. பகைவர்களின் வீட்டில் உண்ணும் உணவில் விஷம் கலந்திருந்தாலும், பாம்பின் விஷம் தாக்கியவர்களுக்கு விஷத்தின் தன்மையைக் கண்டறிவதற்கு மிளகு பயன்படுகிறது. பாம்பால் கடியுண்டவருக்கு மிளகின் எரிப்புச் சுவை தெரியாவிட்டால் உடம்பில் விஷம் தாக்கி விட்டதாகக் கூறுகின்றனர்.

ஆவாரைப் பூ இதழ்களைச் சேகரித்து, நிழலில் உலர்த்திக் காய வைத்து எடுத்து இடித்து வைத்துக் கொண்டு தேனீர், டீப்பொடி இவைகளுக்குப் பதிலாக உபயோகித்து வர உடல் வறட்சி, உடல் நாற்றம், சர்க்கரை நோய், தோல் நோய் ஆகிய நோய்களைக் குணமாக்குவதால், ஆவாரைப் பூவின் மகத்துவத்தைக் குறிக்க வந்த பழமொழியாகும்.

A Simple Story With a Strong Message …

John worked at a meat distribution factory. One day, when he finished with his work schedule, he went into the meat cold room (Freezer) to inspect something but in a moment of bad luck, the door closed and he was locked inside with no help in sight. Although he screamed and knocked with all his might, his cries went unheard as no one could hear him. Most of the workers had already gone and outside the cold room (freezer), it’s impossible to hear what was going on inside. Five hours later, whilst John was on the verge of death, the security guard of the factory eventually opened the door and saved him. John then asked the security guard what he came to do there as it wasn’t part of his work routine.
His replies: “I’ve been working in this factory for 35 years. Hundreds of workers come in and out every day but you’re one of the few who greets me in the morning and says goodbye to me every night when leaving after working hours. Many treat me as if I am invisible. So today like every other day, you greeted me in your simple manner “Hello” at the entrance when resuming for work, But curiously after working hours today, I observed I’ve not heard your “Good bye see you tomorrow”. Hence I decided to check around the factory.
I look forward to your greetings every day because to you, I am someone. By not hearing your farewell, I knew something had happened. Then I Sought and found you!

 

Moral  of the Story…
Be humble, love and respect those around you because life is too short. Try to have an impact on people in ways we can’t even imagine especially the people that cross our path daily. Stay blessed!

Message For the Day…” Desire Distorts and Denigrates the Mind…”

As a pilgrim, you are helped or handicapped by the antics of the mind. The mind has as its warp and woof, desire or thirst for something or the other, getting some gain or avoiding some loss. Desire arises from attachment, which is a consequence of delusion. Desire distorts and denigrates the mind, and keeps it incessantly agitated. No sheet of water can be calm when stones drop on it, and if there is a perpetual shower of desires, it will be pitifully restless. The bliss which emanates from the Soul (Atma) must be stored leveraging the reservoir of your mind (Buddhi). But, if the reservoir has many cracks and crevices (senses), bliss (Aananda) will be frittered away rendering the reservoir of mind dry. When the hunger of the senses is sought to be appeased, your mind becomes vacillating and wayward. Your mind’s legitimate role is to be the master of your senses, which are its servants.

” இந்த தங்க கிண்ணம் தேசிய பாதுகாப்பு நிதிக்கு…”

அந்த அம்மாள் காஞ்சிமாமுனிவரின் திருவடிகளில் விழுந்து வணங்கினார். தாம் கண்ட ஆச்சர்யமான கனவு ஒன்றை ஸ்வாமிகளிடம் விவரித்தார். “நான் ஒரு தங்கக் கிண்ணத்தில் கற்கண்டும் திராட்சைப் பழமும் சமர்ப்பித்துத் தங்களிடம் ஆசியைப் பெறுவதுபோல் கனவு கண்டேன்” என்றார் அந்தப் பெண்மணி.

“அப்படியா, அதுமாதிரி செய்ய உனக்கு விருப்பம் இருந்தா அப்படியே செய்” என்றார் ஸ்வாமிகள்.

“இந்த ஏழையிடம் அதற்கான மனம் இருக்கிறதே தவிர பணம் இல்லையே!” என்று ஏக்கத்துடன் கூறினார் அந்தப் பெண்மணி.

“சௌகரியப்படும்போது செய்யலாம்” என்றார்கள்.

சிறிது காலம் சென்றது. அந்த அம்மாளின் பெரிய தகப்பனார் தம் சொத்தில் ஒரு பங்கை அந்தப் பெண்மணி பேருக்கு எழுதி வைத்து இறந்து போனார். அதன் பிறகு அந்த அம்மாள் சுமார் ரூபாய் நான்காயிரம் எடுத்துக் கொண்டு ஸ்வாமிகளிடம் வந்தார். ஒரு தட்டில் பணத்தைச் சமர்ப்பித்தார்.

“எதுக்கு இந்தப் பணத்தை என்னிடம் கொடுக்கிறாய்!” என்று கேட்டார்கள். அதற்கு அந்த அம்மாள் தாம் முன்பு கூறியபடி தங்கக் கிண்ணத்தில் கற்கண்டும், திராட்சையும் சேர்த்துக் கொடுப்பதற்குப் பதில் பணமாகவே சமர்ப்பித்து விடலாம் என்று எண்ணியதாகக் கூறினார்.

“உன் சொப்பனத்தில் நீ எப்படிச் செய்கிறதாகக் கண்டாயோ அதுமாதிரி விருப்பமானால் செய்யலாம். அதுக்குப் பதில் பணமாகக் கொடுக்க வேண்டிய அவசியமில்லை” என்றார் ஆசார்ய ஸ்வாமிகள்.

அந்தப் பெண்மணி பணத்தைத் திரும்ப எடுத்துக் கொண்டு சென்றார். தங்கத்தினால் சிறிய கிண்ணம் ஒன்றைச் செய்வித்து, அதில் நிறைய கற்கண்டும், திராட்சைப் பழமும் வைத்து மறுபடியும் ஸ்வாமிகளிடம் கொணர்ந்தார். அந்தச் சமயம் அவர்கள் காட்டுப்பள்ளியில் எழுந்தருளி இருந்தார்கள். தங்கக் கிண்ணத்தைப் பெற்றுக் கொண்ட ஸ்வாமிகள் அந்தப் பெண்மணிக்கு ஆசி வழங்கினார்கள். அந்த அம்மாள் தன் கனவு நிறைவேறியதனால் மிக்க மனநிறைவோடு விடை பெற்றுக் கொண்டார்.

பிறகு ஸ்வாமிகள் மடத்து அதிகாரியிடம், “இதைக் கணக்கில் சேர்த்துக் கொள்வதில் ஆக்ஷேபம் ஏதும் உண்டா?” என்று கேட்டார்கள். அதிகாரி சற்றுத் தயங்கினார். தங்கக் கட்டுப்பாட்டுச் சட்டம் அமலில் இருந்த சமயம் அது. அவருடைய தயக்கத்தைப் புரிந்து கொண்டார்கள் ஸ்வாமிகள். “இதை இப்படியே மடத்துக் கணக்கில் சேர்த்துவிட்டால் நான் ஒரு பொய்க்கு உடந்தையாக இருந்ததாக முடியும். நான் உங்களுக்கெல்லாம் வழி காட்டுகிற பீடத்தில் இருந்து கொண்டு ஒரு பொய் சொன்னால், அப்புறம் நீங்களெல்லாம் அதுபோல் ஒன்பது மடங்கு பொய்யைக் கூசாமல் சொல்லலாம் அல்லவா? எனவே எது நியாயமோ அதையே செய்ய வேண்டும்” என்று திருவாய் மலர்ந்தருளினார்கள்.

சரி. அப்படியானால் ஸ்வாமிகள் என்ன செய்யப் போகிறார்கள் என்பதை ஊகிக்க முடியாமல் அதிகாரி திகைத்தார். “இந்தக் கிண்ணத்தைச் சென்னைக்குக் கொண்டு போய் தேசிய பாதுகாப்பு நிதிக்கு என்று முதல் மந்திரியிடம் சேர்த்து விடுங்கள்” என்று கூறி உடனே அதை அனுப்பி விட்டார்கள்.

அப்போது இந்தியாவுக்கும் பாகிஸ்தானுக்கும் யுத்தம் நடந்து கொண்டிருந்த சமயம் – (1965). சென்னை சென்றிருந்தவர்கள் அப்பொழுதிருந்த முதல்வர் மூலமாக அந்த தங்கக் கிண்ணத்தை யுத்தத்தின் முன்னணியில் நின்ற நம் வீரர்களுக்கு அனுப்பி வைத்தார். அதிலிருந்த பிரசாதம் போர்முனையில் நின்ற நம் பாரத வீரர்களுக்கு விநியோகிக்கப் பெற்றது.

* இதயத்தில் கடவுள் குடியிருக்கிறார். அதில் கீழான சிந்தனையை அனுமதித்து குப்பைத் தொட்டியாக வைத்திருப்பது கூடாது.
